Gluten Free Poached Eggs with Lemon Chive Sauce

1 Gluten Free English Muffins toasted (I like Glutino)
1 poached egg
1-2 slices of Canadian back bacon
3 or so stalks of steamed fresh asparagus
finely chopped spring green onions (scallions) and halved baby tomatoes ( for garnish)
Top with Lemon Chive Sauce

Sauce:
1/3 cup butter
2 tbsp. finely chopped chives
juice from 1/2 freshly squeezed lemon
1 tsp. grated lemon zest
1/4 tsp. sea salt
pinch of white pepper

Melt butter in a small sauce pan. Add remaining ingredients beating thoroughly with a whisk over medium heat. Leave sauce over low heat while you poach your eggs. To serve slip the bacon and poached eggs onto the toasted english muffin and top with sauce and sprinkle with green onions with a little side of sliced tomatoes. Serve immediately.
